A no bake simple cheesecake using an Oreo cookie base.
Ingredients
For the base-
280 gm Oreo cookies
1/2 cup Heavy whipping cream
For the filling-
Cream cheese
1 cup Confectioners sugar
450 gm Cream cheese (softened)
4 tbsp Vanilla essence
Heavy cream
1.5 cup Heavy whipping cream
1 cup Confectioners sugar
Optional- Food coloring
1 drop of gel icing coloring for every 200-230 gm of filling.

Blue
Violet
Pink
9 inch Cheesecake pan or cake tin with removable base
Recipe
1. Chill a bowl that can hold double the volume of the heavy cream and a hand or electric whisk in the freezer
2. Crush Oreos by hand ( I did this) or for a neater and clean base, pulse the cookies in a food processor.
3. Spread evenly on the base of a cheesecake pan.
4. Drizzle 1/2 cup of cream over this. Leave in fridge to set for an hour or until your filling is ready
5. To make the cream cheese filling, whisk the ingredients under ‘Cream cheese’ ensuring no lumps are formed
6. Remove the whisk and bowl from the freezer
7. Add ingredients under ‘Heavy cream’ to this bowl and whisk till stiff peaks form
8. Using a spatula fold in the cream cheese mixture into the heavy cream mixture taking only as much as the spatula can hold at a time.
9. If using food coloring, divide the mixture into as many parts as you would like to color
10. Mix gel icing color into it gently
11. Remove the cheesecake pan from the fridge
12. Start layering your filling in the order of colors you would like.
Smoothen out each layer as you go, ensuring they reach till the edge
13. Set back in fridge for overnight
Remove from fridge, cut and serve.
