Almond flour crackers

A super quick cracker recipe that doesn’t involve any kneading and is healthy & flavorful at same time

 

Ingredients

2 cups Almond Flour

2 Eggs

1 tbsp Chopped Basil leaves/ Rosemary leaves/ Thyme/ Oregano or any leafy herb

2 tsp Garlic powder (Optional)

2 tbsp Vegetable oil

1 tbsp Salt

 

Recipe

  1. Beat the eggs together and combine all ingredients well with a spatula
  2. This recipe rolls out the dough to at least 13×9 inch sheet. If you are good at rolling out dough, unlike me, you would be able to roll it out thinner and hence larger. cut 2 pieces of parchment paper larger than this
  3. Roll the dough into a single large ball and rest for 5 minutes

  4. Set your oven to preheat to bake at 350 F
  5. Place on the parchment sheet, wet your fingers and flatten out as much as possible

  6. Place the other parchment on top and roll out thin and even

  7. Remove the top layer of parchment carefully

  8. Poke a fork throughout the dough to create holes and using a knife create 1 inch squares on the dough (don’t cut the parchment)

  9. Bake in the oven for 15 minutes at 350 F and then for another 5 minutes at 375 F

  10. Let cool,break it up along the lines and store in fridge
  11. If you feel that the center is still a bit soft, I would recommend microwaving it on high power for a minute to crisp it up

Enjoy by itself or layer it up like a bruschetta or just smear plain old cream cheese for delish snack
