Banana muffins



3 large overripe Bananas

1.4 cups All purpose Flour

1/2 cup Sugar (Increase to 2/3rd if you have a sweet tooth)

1 Egg

2 tbsp Coconut milk (thick, unsweet)

4 tbsp Sunflower oil

1 tsp Baking powder

1 tsp Baking soda

Pinch of Salt


  1. Preheat your oven to 425 F
  2. Line your muffin pan (6 counts) with liners or grease and dust with flour
  3. Add all liquid ingredients to your blender along with bananas (cut into pieces) and blend till smooth
  4. Mix your dry ingredients together
  5. Fold in your wet mix into the dry one until there are no lumps
  6. Pour the batter into your muffin pan cavities
  7. Bake for 5 minutes at the set temperature
  8. After this reduce the temperature to 350 F and bake for another 20 minutes or until a skewer inserted in center comes out clean
  9. Let cool before serving
