Ingredients
3 large overripe Bananas
1.4 cups All purpose Flour
1/2 cup Sugar (Increase to 2/3rd if you have a sweet tooth)
1 Egg
2 tbsp Coconut milk (thick, unsweet)
4 tbsp Sunflower oil
1 tsp Baking powder
1 tsp Baking soda
Pinch of Salt
Recipe
- Preheat your oven to 425 F
- Line your muffin pan (6 counts) with liners or grease and dust with flour
- Add all liquid ingredients to your blender along with bananas (cut into pieces) and blend till smooth
- Mix your dry ingredients together
- Fold in your wet mix into the dry one until there are no lumps
- Pour the batter into your muffin pan cavities
- Bake for 5 minutes at the set temperature
- After this reduce the temperature to 350 F and bake for another 20 minutes or until a skewer inserted in center comes out clean
- Let cool before serving
