Slightly dense and sweet bread, and this one is made in the humble pressure cooker
Ingredients
1 cup warm water
1/3 cup sugar
3/4 tablespoon instant dry yeast
3 cups plain flour
1/8 cup vegetable oil
3/4 teaspoon salt
Steps
- dissolve sugar in the warm water
- ensure that the water is only just warm, you don’t want to kill the yeast
- Add the yeast to the solution. Let it proof. (the yeast will start to look like a creamy foam)
- now mix in the oil and salt
- mix in one cup of flour at a time and mix in well
- the final dough will not stick to your hand at all
- gather the dough together and keep it in a vessel that would allow it to rise at least double the size
- cover with a thin moist cloth (it should not touch the top of the dough)
- once it has risen to double the size (usually in 1-1.5 hours when the temperature is pretty warm) punch down the dough once
- oil the tin in which you intend to bake the bread
- Divide the dough if you need to if you are using multiple pans and place the dough in the tin
- Let it stand and rise for another 30 minutes or till it has risen by at least another half
- Set a stand in your pressure cooker (no water. Completely dry) so that the tin doesn’t touch the base of the cooker
- Place the tin on the stand and close the lid (without the weight on the whistle)
- Cook on medium flame for 15 minutes.
- Lower the flame and open the cooker, brush oil on top of the loaf (it would have already risen)
- Close and cook on low flame for 15 minutes.
- You have delicious fresh home made bread, enjoy it with a mayo or spread or marmalade or jam!
This made a 7 inch diameter loaf (I used a round pan)
