Kerala style Stew

Appam and stew is one of the most beloved breakfast items in Kerala. Made with a medley of mixed vegetables, with meat added to it sometime, this is the perfect dish to go with appam.

Ingredients

1 tbsp Coconut oil

3 Green chillies (slit)

1 tbsp Ginger (chopped)

4 Green Cardomom (crushed)

4 Cloves

1 stick Cinnamon

1 Bay leaf

1 tbsp Black peppercorn (crushed)

1 cup of mixed vegetables:

– Green beans

– Carrots

– Cauliflower

– Green peas

– Potatoes

1 cup Water

200 ml Thick Coconut milk

Salt to taste

Recipe

1. Heat oil in pressure cooker and add ginger and chillies and cook

2. Once tender, add Cardomom, cloves, cinnamon, bay leaf and black pepper and saute for a minute

3. Add the mixed vegetables and combine well

4. Add salt and water to this and let boil

5. Pressure cook for 2 whistles or until veggies are tender

6. Reopen the cooker and add the coconut milk and simmer for 5-7 minutes until the coconut milk is cooked

Serve with appam

Notes:

– If adding chicken add at step 3 and at step 5 let it sit for 4 whistles

– If adding beef or lamb or mutton, pressure cook the meat separately till almost tender and add at step 4. Let it sit for 4 whistles in Step 5
