Kerala beef fry (olathu)

Ingredients

Pressure cooking

1.5 lbs Beef (boneless, cleaned and cut into half inch cubes)

1 tsp Turmeric powder

1 tsp Red chilli powder

1 tsp Coriander powder

1 Green chillies (slit in half)

1/2 Onion (long thin slices)

Water (to cover just upto the top of beef)

Saute

3 tbsp Vegetable oil

3.5 Onions (long thin slices)

2 inch stick Ginger (minced)

1 bulb Garlic (peeled and sliced thin)

2 Green chillies (slit in half)

1 tsp Turmeric powder

1 tsp Red chilli powder

1 tsp Coriander powder

1 tsp Jeera (cumin) powder

1 tsp Black pepper powder

Salt to taste

Recipe

1. Combine all ingredients for pressure cooking in a pressure cooker and pour just enough water to cover the top of it

2. Close and cook on high flame until one whistle

3. Reduce the heat to very low and cook for 40 minutes

In the meantime, let’s start sauteing in a large pan.

4. Heat the oil in the pan on medium heat and add all the spice powders in the saute section and fry

5. Add the ginger, garlic and green chilli to this and cook for few seconds

6. Add the onions and salt and cook until the onions turn golden brown. This takes about 30 minutes or little more

The pressure cooked beef would now be ready

7. Strain all the solids from the cooker

8. Add to the cooked onions and mix well

9. Cook while stirring occasionally till the color of the meat turns dark brown to almost black

Serve hot with rice, chappatis or vattayappam.

Note: this recipe makes the dish quite spicy, which is how we normally have it. Reduce the amount of spice per your taste.
