One happy indulgent casserole from my lazy kitchen!

Ingredients

1 1/2 Cups Potato Mashed
5 Onions (thinly long slice) medium
4 Tomato (thin round slice) medium
6 Habanero pepper (long thin slice)
300 Grams chopped Mixed Vegetables
300 Grams Chicken Mince
3 Eggs
200 Millilitres Cream
1/4 Cup grated cheddar cheese
7 Cheese Slice
To Taste Salt
To Taste Pepper
To Taste Herbs
Oil (for sautee, roast and casserole)

Steps

  1. In this recipe, the individual ingredients are prepared and set aside first and then layered like a lasagna to cook and combine into one rich indulgent main course. (I am using a 25 cm dia dutch oven)
  2. Sautee Onions and peppers with salt till onions are golden
  3. Roast the tomatoes
  4. Sautee the mix veg with salt to taste. add in the cream and herbs and cook till reduced and veggies are tender
  5. Crack the eggs and beat then till fluffy. Make an omelette that would cover the entire diameter of your casserole dish
  6. Sautee the mince with salt and pepper seasoning till cooked
  7. Arranging the casserole: Oil the base of your casserole dish. Now spread a layer of potato mash as the base On top of this spread the onions Next arrange the roasted tomatoes
  8. Add the grated cheese, spread it even Place the Omelette over this Spread the creamy mix veg in a layer Layer out the mince on top of the veggies cover with cheese slices
  9. Close the lid of the casserole and cook on medium flame for 15 minutes.
  10. What you will get is layered casserole with a golden brown potato hash base. Enjoy!
