Ingredients
2 tbsp Vegetable oil
3 Cloves
3 Cardamom pods (lightly crushed)
1 Cinnamon stick
1 Bay leaf
2-3 Green Chillies (slit lengthwise)
1 tsp Cumin (Jeera) powder
1 tbsp Coriander powder
1/2 tbsp Red Chilli powder
1 cup Onion (sliced long and thin)
1.5 tbsp Ginger Garlic paste
1/4 cup Tomato slices
1 cup Coriander leaves (chopped)
3/4 cup Mint leaves (chopped)
1/2 cup Carrot slices
1 cup Cauliflower florets
1/2 cup Green beans/ french beans (chopped into 1 inch pieces)
1 cup Fresh/Frozen Green Peas (shelled)
1 cup Potato (diced)
1 cup Jeera/Jeerakasala rice
2.25 cups Water
Salt to Taste
Recipe
- Heat the oil in a pressure cooker and add the cardamom, bay leaf, cinnamon and cloves
- Fry for a minute on low heat until fragrant
- Add the green chillies and fry
- Combine and add the spice powders and saute for a few seconds
- Bring the heat back up to medium
- Add the onions, salt and ginger garlic paste to this and cook until the onions are softened to a mush
- Add the tomato slices, mint and coriander leaves and cook until well combined
- Combine the remaining vegetables and mix in to this very well
- Add the rice to this along with water and salt as needed
- Mix thoroughly
- Close the pressure cooker and cook for 3 whistles
Serve hot with raita or Indian yoghurt
