Vegetable rice

2 tbsp Vegetable oil

3 Cloves

3 Cardamom pods (lightly crushed)

1 Cinnamon stick

1 Bay leaf

2-3 Green Chillies (slit lengthwise)

1 tsp Cumin (Jeera) powder

1 tbsp Coriander powder

1/2 tbsp Red Chilli powder

1 cup Onion (sliced long and thin)

1.5 tbsp Ginger Garlic paste

1/4 cup Tomato slices

1 cup Coriander leaves (chopped)

3/4 cup Mint leaves (chopped)

1/2 cup Carrot slices

1 cup Cauliflower florets

1/2 cup Green beans/ french beans (chopped into 1 inch pieces)

1 cup Fresh/Frozen Green Peas (shelled)

1 cup Potato (diced)

1 cup Jeera/Jeerakasala rice

2.25 cups Water

Salt to Taste



  1. Heat the oil in a pressure cooker and add the cardamom, bay leaf, cinnamon and cloves
  2. Fry for a minute on low heat until fragrant
  3. Add the green chillies and fry
  4. Combine and add the spice powders and saute for a few seconds
  5. Bring the heat back up to medium
  6. Add the onions, salt and ginger garlic paste to this and cook until the onions are softened to a mush
  7. Add the tomato slices, mint and coriander leaves and cook until well combined
  8. Combine the remaining vegetables and mix in to this very well
  9. Add the rice to this along with water and salt as needed
  10. Mix thoroughly
  11. Close the pressure cooker and cook for 3 whistles

Serve hot with raita or Indian yoghurt
