Carrot and Ginger chutney

carrot chutney



1 tbsp Vegetable oil

3/4 cup Carrot slice (thin)

5-6 Curry Leaves

4 Dry Red chillies

2 tbsp Ginger (chopped)

1/2 cup Onion (chopped)

1/2 cup Water

Salt to Taste


  1. In a pan heat the oil and add the carrot slices
  2. Cook the carrots until the outer edges have browned and caramelized
  3. Add the curry leaves and dry red chillies and fry well
  4. Add the ginger and onion to this and cook until soft and the onions have browned at the edges
  5. Turn off the heat and let cool
  6. In a mixer/grinder/blender add the cooled mixture along with water and salt and grind to a thick paste

Serve with idli, dosa, vada etc or use as a spread for sandwiches
