Ingredients
1 tbsp Vegetable oil
3/4 cup Carrot slice (thin)
5-6 Curry Leaves
4 Dry Red chillies
2 tbsp Ginger (chopped)
1/2 cup Onion (chopped)
1/2 cup Water
Salt to Taste
Recipe
- In a pan heat the oil and add the carrot slices
- Cook the carrots until the outer edges have browned and caramelized
- Add the curry leaves and dry red chillies and fry well
- Add the ginger and onion to this and cook until soft and the onions have browned at the edges
- Turn off the heat and let cool
- In a mixer/grinder/blender add the cooled mixture along with water and salt and grind to a thick paste
Serve with idli, dosa, vada etc or use as a spread for sandwiches
