Kerala Vattayappam


Ingredients

1 cup Raw rice
1 cup Cooked rice
1 cup Grated coconut
1/2 cup Coconut milk (thick)
1/2 cup Sugar
1 tbsp Water
1 tsp Sugar
1 tsp Yeast

Recipe

1. Soak the uncooked rice for 6 hours
2. Drain and set aside after soaking
3. In a grinder or a blender, grind the soaked rice, cooked rice, coconut and sugar along with the coconut milk
4. In a tablespoon of lukewarm water the song the 1tsp sugar
5. Add the yeast to this and wait for it to activate (foam)
6. Mix this well into the batter
7. Set in a warm place for the batter to rise overnight
8. Grease a plate with side walls (like in first picture) with oil
9. Pour the batter evenly into the plate
10. Steam this in a bigger vessel for 15 minutes
Let sit for 5 minutes before serving
